When the opportunity arose for the Pinal Hispanic Council to purchase a restaurant in Eloy, and
name it “La Paloma, (when translated in English means “The Dove”), CEO, Ralph Varela proposed
to the Board of Directors to develop a restaurant business incubator to empower individuals to become self-sufficient with increased job skills and opportunities in the hospitality industry. The restaurant has become a symbol in Eloy and surrounding communities in Pinal County, of what will work when the community gives individuals an opportunity to begin a new life.
La Paloma makes all of our soups, sauces and salad dressings from scratch. Our menu features recipes from the Pinal Hispanic Council and La Paloma staff, as well as a few residents from the Eloy community.
